Great piece, Andy. When we were in Oaxaca we went on a street food tour which involved buying the nixtalamised kernels, getting them ground and taking them to a cafe to be made into tortillas. Unbelievably delicious. We can get good fresh tortillas here in Bristol btw at Otomi
